Glitches and poor planning put damper on Week 2 of resolution

My raw food resolution is hitting some rocky stretches. While my raw food intake dropped last week, I held strong in other respects: That’s about where my progress ended. As I got more involved in projects throughout the week, I found it harder to put down my work to make my meals, well, interesting. I'm always ready to pull together a good salad. But if this raw food lifestyle is going to take root, I have to get more creative than tossing raw greens together. I thought I could hit my raw food quota simply by winging it. Wrong. That only led to many a pizza-and-salad meals. I thought I could deviate from the diet for a day or two, then jump back in at will. Wrong. It is so much easier to just stay on the diet. I spent $15 on ingredients for both recipes: the herbs, a lemon, tomatos, cucumbers, onions, a pepper and the olives. I had the rest of the ingredients already. I made the Fettuccine with Fresh Tomato & Herb Sauce for lunch and only used about a 1/4th of the herbs. So, I think I could make both of the recipes at least twice on what I bought this week. Diet trends come and go a lot like New Year's resolutions do, but one culinary craze that seems to be sticking around is the rage for raw foods. This particular diet consists of eating mainly uncooked, unprocessed and oftentimes organic foods. Its benefits are many-fold, according to the Raw Food Institute  in Washington, D.C., including: Several of my friends have gone on raw food diets. They dropped clothing sizes, improved their skin's appearance and felt energized. I'm already a vegetarian, and watch closely what I eat. Over the years, I've tried similar diets and experienced similar results. But I've avoided going totally raw. That's all about to change. A friend of mine, who recently starting trying a raw food diet, got me interested in raw food. We both have been trying new recipes, reading up on the subject, and eating a lot more raw vegan foods.
